Hey there, folks and happy Monday! I hope you’re doing well because I’m currently in the middle–literally–of celebrating my book-a-versary, which for those of you not in the know is the day my very first book was published. September 17th, 2014. It wasn’t all that long ago but it was long enough that it’s something to celebrate. My small town romance has been keeping me busy, right now, doing giveaways and events on my Facebook author page. And now we’re back to delicious vegan food!
This is a recipe that my husband made so, unfortunately, I don’t have all the ins and outs of what he did to bring this creation to the plate. Why? Honestly the truth is that when it’s his night to cook, I take the win and don’t bother myself with much other than the ingredients, which we share through Cronometer.

Despite being a writer and published author, I swear he is far more creative than I am when it comes to creating new/unique dishes. This particular vegan recipe was his creation and it was surprisingly tasty.

What’s In It?
The bottom layer of this vegan tofu pie is a tortilla shell. He used our new silicon baking tray to form the base of the pie. The rest of the pie is tofu, mashed with a fork, sliced grilled onions, TVP, nutritional yeast and cherry tomatoes which were cooked on top until they burst.
How To Cook It?
This vegan tofu pie went in the oven for about 35 minutes, possibly more. He had to walk the tightrope of making sure the ‘pie’ came together without falling apart while also not burning the tortilla shell which took some time.
You always have to make this decision with new recipes, do you crank the heat to shorten the cooking time and risk ruining the whole vegan meal? Or do you exercise patience and wait until you’re so hungry you get hangry?

Verdict?
Delicious. Okay, maybe I’m biased because it’s my hubs but he’s a very good cook who has only improved over the years and he really gets into it so yeah, I totally approve. It was, once again, a recipe I was skeptical about but was actually pretty good. It didn’t need anything extra but I will admit that I added a few splashes of hot sauce because well, that’s just what I do sometimes.

It was perfectly tasty and maybe one day I might recreate it with mushrooms. I don’t know.
