Vegan Fudgy Date Brownie Bites

So you all know that I’m not big on desserts but when I want something sweet, I almost always want brownies. They are chocolatey and delicious and I have them so rarely that it’s truly sad. Or maybe not since I’m thisclose to my weight goal. I don’t know, but what I do know is that I’ve found a wonderful way to have my brownies and be able to eat them too!

What does that mean, you ask?

Well I’ve found a way to cut out the flour and the sugar without sacrificing the texture or the taste, which is a pretty big win as far as I’m concerned.

This vegan brownie bite recipe is easy, it’s tasty and it’s a lot more calorie friendly than traditional or regular brownies. But it does require a few substitutions so if you’re on board with that, lets get our sweet treats on!

What You’ll Need:

*Silicon baking cups
*Food processor or blender
*Spatula
*Measuring cups

Ingredients:

*390g – Dates (no pits)
*32g – Cocoa powder
*60g – Hot water or hot coffee
*118g – Peanut butter (or any other nut butter)
*24g – Coconut Oil
*40g – Nuts (I used hazelnuts but any will work)
*45g Chocolate chips* (optional)

Make the Brownie Bites:

*Preheat oven to 350F/175C.

*Add dates to food processor or blender and run until they start to break apart or until a big ball forms. If you hear any pits left in there, stop and dig them out.

*Break up the big ball with a wooden spoon or spatula, add hot water or coffee and scrape the sides.

*Add coconut oil, cocoa powder and peanut butter to food processor and run again. The batter will be slightly sticky and that’s exactly what you want.

*Add in chocolate chips and nuts, which are totally optional but really make these vegan brownies delicious.

*You can use a loaf pan if you want but I used muffin pans because I just bought new ones and I wanted to test them out. Divide them evenly. The measurements above made 18 brownie bites but you might be able to get more less depending on how you divvy it all up.

*Use the back of a spoon or a cup to flatten in nice and neat (which I skimped out on and it totally shows) and place in the oven.

*Cook for 10 to 12 minutes and let cool for 15 to 20 minutes.

*EAT!

    I make sugar-free, flour-free vegan brownies from time to time.
    I’ve also made black bean brownies which are delicious and very very filling!

        The good news about them, a small piece goes a long way! They are VERY filling. Half a brownie will do the trick.
