Hey there, my fellow vegans! Yesterday was a busy day that got away from me and by the time I realized there was a blog post due, it was eleven in Romania. So I’m going to give you a post today and tomorrow.
Lately I’ve been incredibly busy and taking a lot of vegan food inspiration from Instagram because hey, people with more time and skill than I have are creating amazing content from which me and the Hubs can benefit so, why not?
Recently I came across a quick video for tofurky made with tofu and vital wheat gluten and since I’ve made vegan sausages and vegan gyros, I figured it was time to add something else to my repertoire. Besides all that, we LOVE sandwiches. I mean who doesn’t love sandwiches? But I don’t eat them nearly as much as I should because I usually opt for something with a lot more veggies to fill me up better and for longer.

But not today!
This is a pretty simple recipe because your kitchen appliances will do most of the work, which is my kind of recipe so let’s get to it!
Kitchen Tools:
*Food processor
*Measuring spoons
*Aluminum foil
Ingredients:
*Smoked tofu
*Nutritional yeast
*Vital wheat gluten (seitan)
*Ground cumin
*Smoky paprika
*Granulated garlic
*Turmeric
*Oregano
*Oil
*Soy sauce
*Veggie broth
*Cornstarch
*Spicy paprika

Instructions:
*Add tofu, herbs & spices (1 to 2 tsp.), oil, cornstarch and nooch to the food processor. Let it run until a paste forms.
*Add in vital wheat gluten and run until a ‘dough’ starts to form.
*Shape into log and wrap in foil, then bake at 185C/350F for 1 hour
*Let it cool and slice.


You can use this for sandwiches, which we totally did but it works great with crackers and cheese for a quick vegan snack. You can dice it up and add it to your favorite pasta dish or however else you like.


Also, feel free to add different herbs and spices to change up the flavor. The original video used plain tofu but I used smoked tofu because I didn’t have the liquid smoke it required. Next time, I’m going to try it with plain tofu and I will happily show you the results.
