Hey You…how’s it going?
So, you know how I like to remind you just how important prep work is when it comes to proper cooking at home? Well I have a lesson of my own to share with you recently.
You know how I’ve been in my baking era recently? Well I had it in my head that I–finally–wanted to make red velvet cookies. Not gonna lie, I’m not a huge fan of red velvet cookies. They’re pretty to look at but honestly they’re not better than regular ol’ chocolate cookies and often have that artificial flavor.

Still, I thought my Romanian friends and family would love them, and they probably would have. If I’d actually had any red food coloring. Insert sarcastic laughter here.
Gathering Ingredients
I knew I had all the ingredients, even the food coloring because I bought some and I couldn’t remember using it. So I pulled out the flour, sugar, butter and cocoa powder, getting giddy about that stunning red color that I just knew my mother-in-law would love.

Only to find the four pack had green, blue and yellow. But the red was gone. GONE! I’d used it, if you can freakin’ believe it! I couldn’t believe so I spent more time than I should have searching for it and coming up empty.
So I decided, on the fly, to go ahead and use the green. Besides, a long time ago I had a green velvet dress and it was beautiful. So, why not. Right?
Emerald-ish
The cookies were delicious because I’ve definitely stepped up my cookie game thanks to Rama vegan butter made especially for baking. They were crispy on the edges and soft and moist on the inside. I added dark chocolate chunks in a few of the cookies and holy moly, that took them to the next level!
But…they weren’t all that green. Or emerald. Or really any shade of green.
As you can see they have a weird hue that maybe, kinda, sorta belong in the green family but even my eyes aren’t sure, and I made them!

What I Did Wrong
Honestly, I have no idea. I think maybe because green isn’t quite as vibrant as red that maybe I needed less cocoa powder to make the green color pop.
Also I think I should’ve used white sugar rather than dark brown because that color probably stole some of the green’s shine.
I can’t say what I did wrong, but now I’m kind of intrigued by making other color velvet cookies so I’m going to play around with it and see what I come up with.
