Recreating A New Vegan Favorite ~ Vegan Sausage, Mamaliga & Sauteed Pickled Cabbage

One of the things we LOVE to do when we carve out time for a day off is head to the mountains. Where we are in Romania means we’re a quick drive to the Bucegi Mountains which are part of the Southern Carpathian Mountains. You might remember my hike up Caraiman Peak a few years back.

Anyway whenever we end up in Sinaia, which we do quite a bit because it’s gorgeous, Peleș Castle is located there and it is one of my favorite locations in Romania, and it’s a great Hallmark-esque mountain town for walking in every season. When we’re there the options for vegan food are quite limited. You can get a vegan burger pretty much anywhere, which is a kind of victory but it’s also nothing to write home about. There’s a place that’s mostly vegetarian with some vegan options and then there’s Snow Restaurant which has a really amazing vegan dish featuring: Mamaliga (Romanian polenta), Beyond sausage, Garlic aioli and sauteed sauerkraut.

It’s delicious. Very well made and more importantly, well-seasoned.

It’s pricey but worth it, in my opinion.

The thing is that it’s been hot. Really effing hot and we’ve mostly been staying inside which means no drives up the mountain and no Snow. So my lovely husband decided to recreate the dish right here at home.

It was a slam dunk for me, but I might be a little biased.

He even made the garlic aioli but with vegan cocogurt instead of oil!

Snow’s servings are bigger b/c it’s a restaurant and duh.

You see how easy it can be to recreate your favorite vegan restaurant meals? Ask a few questions if you really like a dish, usually the waitstaff or the chef is happy to talk food & cooking with customers.

If you can’t make it back for whatever reason, do it at home for yourself.

    Looks so good, we don’t have a lot of good vegan sausage options here so I’m jealous lol!

      We don’t either, honestly. Those Beyond literally came to the supermarket like 2 weeks ago, which is why I learned how to make them using vital wheat gluten and now I don’t have to! I recently saw on IG some made with mushrooms

        I use that recipe with the mushrooms for sausages. Vegan meat is often just easier to make at home. I use that recipe for burger patties too since Beyond Burgers aren’t always available here.
