When you’re in the mood for a nice hot vegan meal that won’t have you in the kitchen all day, here’s my advice: grab a grain, a protein, a vegetable and make a quick sauce. In thirty minutes (give or take) you’ll have a delicious vegan meal that will make you feel good about yourself.
Bonus points, it’ll satisfy your hunger.

The great thing about popular vegan takeout dishes, is that you can make them as simple or as complicated as you want, depending on your time constraints. As you can see from the photo above, the ingredient list isn’t all that complicated but it’s the sauce that gives this Mongolian Tofu most of the flavor.
The main ingredients are:
Broccoli
Rice
TVP or Tofu
Onion
Bell pepper
GInger
Garlic
A quick steam on the broccoli is all that’s necessary and add a little salt and pepper to season.
Marinate the tofu or rehydrate the TVP and then season it with your favorite Asian spices.
Cook the ginger, garlic, onion and bell pepper in a skillet over medium-high heat until transparent, while you toss the marinated tofu in a few grams of peanut oil and cook in the Air fryer for about 10 minutes. The time in the air fryer will depend on the size, brand, and temperature you choose.
Now for the sauce you will need: Brown sugar, cornstarch slurry (equal parts cornstarch & water), and soy sauce. Mix it all together and pour on top of the vegetables. Bring to a boil and then reduce to a simmer. When the sauce is thick, add the tofu pieces and stir until coated.
Serve on a bed of rice, steamed broccoli on the side and you’ve got a delicious Mongolian Tofu for half the cost, a shorter wait time, lower calories and you don’t have to put on pants when the delivery person arrives!
As you can see, this recipe comes in at just 538 calories, which is thanks to minimal oil during frying so choose for yourself if you want to increase the calorie count, but honestly you won’t miss the oil.
